Go Red 🍅
This one uses lots of red stuff!

Go Red is yet another variation on Hoppin’ John.
1-1/4 cups raw, long-grain brown rice
1-1/2 cups raw red lentils
1 cup coarsely chopped celery
1 cup coarsely chopped yellow onion
2 scallions, chopped
15 oz can diced tomatoes, well drained
1/2 cup coarsely chopped red bell pepper
1-1/2 oz grated Münster cheese
1/4 cup plain, low fat yogurt
freshly ground white pepper and salt, to taste
Cook the rice; set aside.
Cook the lentils and celery together until they’re tender. (Note: these lentils cook very quickly; and need no pre-soaking).
Drain the lentils; stir in the cheese and let it melt. Add the yogurt, salt, and pepper. Mix in the tomatoes; onion and scallions; and bell pepper. Stir in the rice.
Makes about 12 cups.
